Introducing ten new creations, our mixologists' inspiration is drawn from classic cocktails and influenced by new elements. One of the signature cocktails is named 'Gloucester Road' and represents our hotel's location in Causeway and features our hotel's exclusive gin, PL50.

On Christmas Eve and Christmas Day, SKYE offers a luxurious unlimited French dinner feast. The culinary experience starts with a selection of elegant appetizers, followed by an all-you-can-eat carving trolley featuring Australian Ribeye Beef. Guests can choose from a variety of exquisite main courses. The meal concludes with a refined dessert selection, ensuring a sweet ending to the festive celebration.

White truffles are a cherished delicacy revered for their exquisite aroma and flavor. Originating from the rich soils of Italy these fungi thrive in harmony with the roots of trees such as oak and hazelnut. Harvested during the fall and winter months, white truffles enhance culinary creations with their earthy essence. Their rarity and the meticulous art of foraging render them one of the most luxurious ingredients in the gastronomic realm. Our chef Florian Muller curated a white truffle à la carte menu.
